Dump meal guides

The how-to behind the recipes. Start with what a dump meal is if you're new to the idea, or with the freezer-bag guide if you want a freezer full of dinners.

The short version

If you read nothing else, these are the habits that make dump meals work and keep them safe. Each guide explains the why.

  • Start thawed. Meat goes into the slow cooker thawed, never frozen. A freezer bag thaws in the refrigerator, usually overnight or about 24 hours.
  • Fill it half to two-thirds full. Too little and it cooks too fast and dries out; too much and it may not heat through in time. Use the size the recipe names.
  • Keep the lid on. Every peek lets out heat and adds cooking time.
  • Check with a thermometer. Chicken and turkey are done at 165°F, ground meat at 160°F, and roasts and chops at 145°F, then a 3-minute rest. Pot roast and pulled pork cook well past that, until they fall apart.
  • Add the soft things last. Sour cream, cheese, pasta and quick greens go in near the end, not at the start.
  • Put leftovers away within two hours, and reheat them on the stove or in the microwave, not in the slow cooker.
