The cherry pineapple dump cake is the one most people picture: canned pineapple spread on the bottom, cherry pie filling on top, a dry cake mix sprinkled over it, and butter over that. Nothing is stirred. The butter melts into the mix and turns it into a golden, crisp topping while the fruit bubbles below.
The crushed pineapple goes in with its juice, which wets the bottom of the dish and keeps the cake mix from drying out. Serve warm in bowls with vanilla ice cream or whipped topping. It is a good potluck dessert since it travels in the pan it was baked in.
Leftovers keep covered in the refrigerator for a few days. Warm single portions in the microwave until hot. If you like a little crunch, add a half cup of chopped nuts to the top.
Ingredients
Into the dish
- 1 (20-ounce) can crushed pineapple in juice
- 1 (21-ounce) can cherry pie filling
- 1 (15.25-ounce) box yellow cake mix
- 1½ sticks butter, cut in thin slices
- nonstick cooking spray
Directions
- Heat the oven to 350°F. Spray a 9-by-13-inch baking dish.
- Spread the pineapple, with its juice, in the bottom of the dish.
- Spoon the cherry pie filling over the pineapple and spread it evenly.
- Sprinkle the dry cake mix over the fruit in an even layer. Do not stir.
- Lay thin slices of butter over the mix, covering as much of the surface as you can.
- Bake 45 to 55 minutes, until the topping is golden brown and the fruit is bubbling at the edges.
- Cool 15 minutes before serving.
It's done when the topping is golden brown with no dry, powdery patches, and the fruit is bubbling at the edges of the dish.
Cover leftovers and put them in the refrigerator within two hours.
Tips
- If any dry mix is left on the surface, dab it with a little butter or press it down gently.
- Do not stir. The layers are what make it work.
